INGREDIENT
Apam Balik Base
700g Kuda Biru Enriched Flour
400g Brown Sugar
600g Egg
1tsp Sodium Bicarbonate
2tsp Baking Powder
15g Eagle Instant Dry Yeast
500g Water

Method
- Mix everything in the mixing bowl.
- Use low speed and once the flour is mixed, then turn to high speed for 15 – 20 minutes.
- Heat a non-stick pan over a medium heat. Lightly oil it if necessary.
- Pour a ladle of batter into the pan. Swirl it around gently to spread.
- Cook uncovered for about 2 – 3 minutes until bubbles form and the surface is set.
- Sprinkle the toppings evenly.
- Cover the pan with a lid and cook another 2 – 3 minutes until the bottom is golden and the top is cooked.
- Fold the pancake in half and remove from pan and serve warm.
