Snow Skin Mooncake : Pine Nut Honey Pumpkin Lotus Paste

INGREDIENT

Snow Skin Mooncake

395g   BWY Snow Skin Mooncake Mix

260ml Iced cold water

60g     Shortening (included)

45g     Koh fun (included, for dusting)

 

Pine Nut Honey Pumpkin Lotus Paste – Each pieces

20g Pine nut filling

70g HK Pumpkin Lotus paste

Method
  1. Beat snow skin mix, shortening and iced cold water until well combined.
  2. Cover the dough with wet cloth and leave aside for 20 minutes before dividing it.
  3. Divide the rested dough into portions of 30g each.
  4. Flatten one portion of dough into a round disc.
  5. Take the HK pumpkin lotus paste and flatten it slightly in your palm.
  6. Place pine nut filling in the middle and roll into a smooth ball.
  7. Wrap the flattened dough around the filling ball, sealing the edges completely.
  8. Roll the filled ball gently between your palms to smooth out the surface.
  9. Use koh fun to dust the mooncake balls , press into a mooncake mold. Tap to release.
  10. Store mooncakes in air tight containers and chill in fridge.
