
Momoyama Crust Mooncake : Coconut & Macadamia Lotus Paste

INGREDIENT
40g Momoyama Mooncake Skin
15g Coconut Macadamia filling
65g HK Lotus paste
Method
- Preheat oven to 160°c.
- Divide the momoyama mooncake dough into portions of 40g each.
- Flatten one portion of dough into a round disc.
- Take the HK dragon fruit lotus paste and flatten it slightly in your palm.
- Place coconut macadamia filling in the middle then roll into a smooth ball.
- Wrap the flattened dough around the filling ball, sealing the edges completely.
- Roll the filled ball gently between your palms to smooth out the surface.
- Press into a mooncake mold. Tap to release.
- Lightly spray with water and bake the mooncakes for 20 minutes.
- Lightly spray with water again and continue baking for 5 minutes .
