Momoyama Crust Mooncake : Coconut & Macadamia Dragon Fruit Lotus Paste

INGREDIENT

40g Momoyama Mooncake Skin

15g Coconut Macadamia filling

65g HK Dragon Fruit Lotus paste

Method
  1. Preheat oven to 160°c.
  2. Divide the momoyama mooncake dough into portions of 40g each.
  3. Flatten one portion of dough into a round disc.
  4. Take the HK dragon fruit lotus paste and flatten it slightly in your palm.
  5. Place coconut macadamia filling in the middle then roll into a smooth ball.
  6. Wrap the flattened dough around the filling ball, sealing the edges completely.
  7. Roll the filled ball gently between your palms to smooth out the surface.
  8. Press into a mooncake mold. Tap to release.
  9. Lightly spray with water and bake the mooncakes for 20 minutes.
  10. Lightly spray with water again and continue baking for 5 minutes .
