Clear Broth Noodles

INGREDIENT​​​

500g               Bakers’ Choice Flour

1/4 tsp            Salt

45g​                 Egg

170g – 200g    Water (adjust to texture)

Method
  1. Add in Bakers’ Choice Flour and salt in a mixing bowl.
  2. Make a well in the middle and add in the egg. Stir with spatula while rotating bowl.
  3. Add in water slowly and mixing it constantly with hand until it forms a dough. Keep kneading until the dough starts coming together and no longer sticks to hand.
  4. After 20 – 25 minutes of kneading, dough will be soft yet springy to touch.
  5. Shape dough into a ball and place it in the same mixing bowl cover with a wet kitchen cloth to rest for 30 minutes.
  6. Flatten, fold and cut dough into noodles strands or use a pasta machine to continue the rest of the process.
  7. Bring a large pot of salted water to a boil.
  8. Add noodles and cook for 2 – 4 minutes .
  9. Drain and serve with a clear broth.
