
Clear Broth Noodles

INGREDIENT
500g Bakers’ Choice Flour
1/4 tsp Salt
45g Egg
170g – 200g Water (adjust to texture)
Method
- Add in Bakers’ Choice Flour and salt in a mixing bowl.
- Make a well in the middle and add in the egg. Stir with spatula while rotating bowl.
- Add in water slowly and mixing it constantly with hand until it forms a dough. Keep kneading until the dough starts coming together and no longer sticks to hand.
- After 20 – 25 minutes of kneading, dough will be soft yet springy to touch.
- Shape dough into a ball and place it in the same mixing bowl cover with a wet kitchen cloth to rest for 30 minutes.
- Flatten, fold and cut dough into noodles strands or use a pasta machine to continue the rest of the process.
- Bring a large pot of salted water to a boil.
- Add noodles and cook for 2 – 4 minutes .
- Drain and serve with a clear broth.
