INGREDIENT

Mooncake Skin Dough

A

60g  Arla Pro Creamery Salted Butter

22g  Icing Sugar

B

12g ±  Arla Pro Whip & Cook

C

20g  Milk Powder

90g  Low Protein Flour

 

Red bean Filling

25g x 4  Mooncake filling

12g x 4  Rabbit head

 

Gel Colouring

White

Pink

Purple

Yellow

Green

Method

Mooncake Skin Dough

  1. Mix (A) and add (B) . Mix well.
  2. Then add the sieved (C) and mix well.
  3. Cut into 25g pieces and wrap them.

Mooncake assembling

  1. Shape rabbit head x 4 , 12g each and mix with white colouring.
  2. Wrap with 12g filling and make it into a round shape.
  3. Shape rabbit body x 2 , 6g each and mix with white colouring.
  4. Shape rabbit ear x 8 , 5g each and mix with white coloring .
  5. Another rabbit ear x 8 , 3g each and mix with pink colouring.
  6. Shape mini mooncake and flower x 4 , 5g each . Mix with pink, purple and yellow coloring.
  7. Shape leaves with 3g dough. Mix with green colouring.
  8. Assemble and press lightly to secure the shape.
