90g Low Protein Flour
Red bean Filling
25g x 4 Mooncake filling
12g x 4 Rabbit head
Gel Colouring

Method
Mooncake Skin Dough
- Mix (A) and add (B) . Mix well.
- Then add the sieved (C) and mix well.
- Cut into 25g pieces and wrap them.
Mooncake assembling
- Shape rabbit head x 4 , 12g each and mix with white colouring.
- Wrap with 12g filling and make it into a round shape.
- Shape rabbit body x 2 , 6g each and mix with white colouring.
- Shape rabbit ear x 8 , 5g each and mix with white coloring .
- Another rabbit ear x 8 , 3g each and mix with pink colouring.
- Shape mini mooncake and flower x 4 , 5g each . Mix with pink, purple and yellow coloring.
- Shape leaves with 3g dough. Mix with green colouring.
- Assemble and press lightly to secure the shape.
