Spicy Anchovies Fried Rice

INGREDIENT

Fried Rice

150g        Day-old leftover rice (about 1 cup, loosely packed)

1 pcs       Small red onion

2 cloves   Garlic

3 pcs        Bird’s Eye chili (adjust to heat level)

20g           Small anchovies

40g           Long bean (diced)

40g           Carrot (diced)

1 tsp         Salt (adjust to taste)

½ tsp        MSG (adjust to taste)

¼ cup       Cooking oil (for frying)

Topping

1 Nos        Egg

 

Method
  1. Blend or crush onion, garlic, bird’s eye chili and anchovies until left like small bits or paste .

  2. Diced long bean and carrot. Set aside .

  3. Heat oil in a wok/pan. Fry egg and set aside .

  4. Using the same oil , sauté blended paste until fragrant .

  5. Add in diced vegetable . Stir-fry 2–3 minutes until slightly tender .

  6. Add day-old rice, breaking up clumps. Stir-fry well to mix with cooked paste and vegetables.
  7. Add salt and MSG . Mix evenly and adjust taste if needed .

  8. Plate hot, top with fried egg and  garnish with spring onion or cucumber slices if desired .
