Steamed Pandan Coconut Cake (Kuih Puteri Ayu)
Ingredients:
- 150gm BWY Cake Flour
- 1 tbsp wheat starch
- 2 nos eggs
- 120gm castor sugar
- 1 tsp ovalette
- ½ tsp salt
- ½ tsp Nona Manis Pandan Paste
- ¼ cup coconut milk
- 60gm fresh grated coconut
- 1 pcs pandan leaf
- A pinch of salt
Bahan:
- 150gm Tepung Kek BWY
- 1 tbsp tepung kanji
- 2 nos telur
- 120gm gula kastor
- 1 tsp ovalette
- ½ tsp garam
- ½ tsp Pes Pandan Nona Manis
- ¼ cawan santan
- 60gm kelapa parut segar
- 1 pcs daun pandan
- Secubit garam
Method:
- Steam grated coconut, salt and pandan leaves together, set aside.
- Heat the steamer.
- In a mixing bowl, mix together sugar, eggs, and ovalette until fluffy.
- Add in sifted flour, starch, pandan paste and coconut milk, stir until all ingredients are well combined.
- Brush the mould with some cooking oil and fill with grated coconut (press to make it firmed).
- Pour in batter until it is full, put in a steamer, steam for 15 minutes.
- Remove the cake from the mould when slightly cool.
Cara Membuat:
- Kukus kelapa parut, garam dan daun pandan bersama-sama, ketepikan.
- Panaskan pengukus.
- Di dalam mangkuk pengadun, campurkan gula, telur, dan ovalette sehingga gebu.
- Masukkan tepung, kanji, pes pandan dan santan yang telah diayak, gaul sehingga sebati.
- Sapu acuan dengan sedikit minyak masak dan isi dengan kelapa parut (tekan dan padatkannya).
- Tuang adunan hingga penuh, masukkan ke dalam pengukus, kukus selama 15 minit.
- Keluarkan ia dari acuan apabila sudah sedikit sejuk.
