Kek Batik Cheese

  • 125gm Ausicows Butter
  • 200gm Richs Double Cream
  • 100gm Milo
  • 25gm Cocoa Powder
  • 3gm Salt
  • 270gm Digestive Biscuits

Cheese Layer

  • 125gm Sungold Cream Cheese
  • 25gm Sugar
  • 25gm Richs Double Cream
  • 3gm Gelatin (mix with 15g of water)
  • 100gm Richs Double Cream*

Chocolate Ganache

  • 150gm Cottura Dark Chocolate
  • 125gm Richs Double Cream

Method:

Biscuit Layer

  1. Line an 8″ x 8″ cake pan with parchment paper.
  2. Cook all ingredients, except the biscuits, until smooth and thick. Fold the biscuits into the mixture.
  3. Fill and press the biscuit layer firmly into the cake pan.
  4. Chill in the refrigerator while preparing the cheese layer.

Cheese Layer

  1. Beat the cream cheese, sugar, and double cream until smooth and creamy. Add the gelatin mixture and mix well.
  2. Whip double cream until thick and fold it into the cheese mixture. Pour the mixture over the biscuit layer and refrigerate for at least 4 hours until firm.

Chocolate Ganache

  1. Heat the double cream and pour it over the dark cooking chocolate, stirring until smooth.
  2. Pour the ganache over the cheese layer and refrigerate overnight.
