Cranberry Cheese Tart

Ingredients:

Cranberry Cream Cheese

  • 110 grams Frozen US Cranberries
  • 30 grams US Cranberries Juice
  • 20 grams Sugar
  • 300 grams Cream Cheese
  • 50 grams Icing Sugar
  • 30 grams Cream
  • 9-12 pieces Ready-Made Tart Shell

Garnish

  • Frozen Cranberries
  • Whipped Cream
  • Mint Leaves

Method:

  1. Place frozen cranberries, cranberry juice and sugar in a pot, cook over low to medium heat until cranberries mashed up and dried up. Set aside to cool then blend until smooth.
  2. In a bowl, mix cream cheese and icing sugar with an electric mixer until smooth. Do not overwhip it.
  3. Add in the blended cranberry mixture and cream. Mix for 10 seconds, or until well combined. Cling wrap the mixture and chill in the refrigerator for 15 minutes.
  4. Transfer the chilled mixture into a piping bag and pipe into a ready-made tart shell. Repeat the step with remaining mixture.
  5. Lastly, garnish with whipped cream, frozen cranberries and mint leaves. Serve immediately or cold.
